Cognac is a brandy produced in a limited region around the town of Cognac, including part of Charente, Charente-Maritime and a few enclaves in Dordogne and Deux-Sèvres. The main grape varieties used are Ugni-blanc, Folle-blanche and Colombard.

In the 15th century, wines from this region were very appreciated in Europe, even though they were in severe competition with Bordeaux wines and were difficult to ship due to their low alcohol level. To counter this, they were distilled then transported in barrels which increased their popularity, especially in the Netherlands.
In the 17th century, Anglo-saxons and the Dutch people decided to use a double distillation like for irish whisky ; a technique which spread quickly. In the 18th century, a few trading companies (Maisons de Négoce) specialized in cognac production and sales, such as Martell, Hennessy, Delamain and Hine.
